Video: Feta & Spinach Brioche

Hello, and welcome, I'm Chef Peter, professionally trained chef. Today, we're cooking at Cork and Platter, and I want to show you how to make a spinach and feta brioche. What we start off with, we have a third cup of warm water, and a whole pack of dry yeast, which we'll combine together. So, the yeast can act with the water. Then, we add one tablespoon of sugar to this and one teaspoon of salt. Now, we set it aside and give it a rest, meanwhile we can start with the other ingredients. We have three and a half cups of flour here, which we put in a bowl, and add four eggs to that. And when it's like half way combined, we add our warm water with yeast, and work that altogether. We want to create a nice, firm dough, which we're going to work our butter in, later on by hand. Now, we work our dough by hand on our floured work space. And try to flatten it out as much as you can. And then, we take about a third of the butter we got here aside, we got two sticks of butter, let it sit by room temperature and we spread it out on our dough. And fold it over and work the butter into our dough. Now, we have our brioche dough all nicely worked together, we've got all the butter in. We're going to just take it, put it on a plate and cover it with plastic foil and leave it in the fridge for overnight. Our dough was sitting overnight in the refrigerator, and reached the right consistency, where we want. So, what we're going to do right now, we roll it out with a rolling pin. When you get your dough at the required length, what you want to do, is I spread it out just in the middle, and a half cup of crumbled feta cheese. Just nicely put it all over it and start rolling it up, make a nice, long, beautiful roulade, which you just an work in a little bit. And then, cut it in half, and work in the ends, so it's closed on every side. Then, we have two little bread baking pound cake forms here, which we greased out and we set our little rolls of brioche right here in the middle. Then, we take one egg yolk, and mix it with two tablespoons of water, mix it altogether. And we brush our brioche with it, and here we go. Our two brioche filled with spinach and feta cheese are ready to go in the oven. And we're going to put them in the oven at 350 degrees for about 40 minutes. Our brioche was in the oven for 40 minutes now, it should be nice and golden brown, let's try and take it out. It's a very beautiful bread to entertain all your guests.
