- 1). Sort through the mung beans to remove any pebbles or misshapen or discolored beans. Rinse the beans in water to be sure they are clean.
- 2). Add 1 cup of beans to 4 cups of water and bring the water to a boil.
- 3). Bring the water down to a simmer once it has begun to boil.
- 4). Simmer the beans for 45 minutes.
- 5). Add seasoning and herbs of your choice in the last few minutes of cooking, making sure to stir the mixture well to incorporate the spices.
