Hi, I'm Chef Candace Conley, and I'm gonna show you how to make chicken fried steak with beef cutlets. Now this is a traditional southern classic, and it's delicious. It's not that hard to make, I think you'll really like it. Now you do start with a very small and relatively thin beef cutlet, because you need to pound it out. It's gonna get larger that way, but you want it thin so that it's tender. Then you're gonna do the traditional three stage breading, and that includes seasoned flour, a beaten egg wash, and then seasoned bread crumbs. And you're going to take your steak into the flour, then into the egg, and then into the breadcrumbs. Then once you have your cutlets finished, you're going to go into a saute pan with a, just, probably an eighth of an inch, just covering the bottom with canola oil, or a grape seed oil with not much flavor, and then you're going to fry them about two to three minutes per side. This is a shallow fry, not a deep fry, so it's a little bit healthier. And then once they're golden brown, they're ready to serve.
