- If you want eggs fast, here is the way to do it. Prepare the filling for your omelet the night before you are going to make it. You can put anything you want in the filling, but make sure it is about half a cup worth of food (many people use vegetables and cheese). In the morning, beat together two eggs and two tbsp. of water. Grab a 10-inch pan and heat a tablespoon of butter until it is just hot enough to sizzle a drop of water. When it gets to the desired heat, pour the egg mixture in.
The egg will set at the edges. To keep it from burning, push the edges in toward the center and let the uncooked portions of the egg get to the heat. Once the egg is cooked and there are no more runny parts, put your filling in the center and fold the egg over. Once the egg is folded, you can invert it onto a plate and serve it. The total cooking time with prep should be about 3 minutes. - This wrap will help you get complex carbohydrates (which affect serotonin levels in the brain), protein and potassium. Take a couple of healthy frozen waffles (Eggo has a brand called Special K), and microwave them until warm. Take one banana and split it down the center. One each waffle, spread a spoonful of peanut butter on one side and divide the banana between them. Roll them up and enjoy. For an extra treat (which adds some calcium), wash them down with chocolate milk.
- For this burrito, you will need two eggs, one pack of frozen Santa Fe vegetables, one flour tortilla, ½ cup of shredded cheddar cheese and ¼ cup of salsa. To start, mix the eggs with the frozen vegetables. Spread the mixture on a plate and microwave for a minute. Stir the mixture with a fork and microwave until the mixture is cooked. Once complete, pile the mixture onto the tortilla, add the cheese and salsa, fold it over and eat it. This meal takes about 4 minutes to make and is packed with protein.
