- Since each vegetable has a different growing time, you must plant them so they have enough time to mature before frost comes. For example, vegetables like eggplant and beans should be planted in July, while faster growing vegetables like broccoli, squash, and cabbage can wait until August.
- You can wait even longer to plant cool weather vegetables like onions, lettuce, and spinach. Wait until September to plant these vegetables because they cannot tolerate very hot weather.
- While you can wait until November to plant hardy vegetables like asparagus, not all vegetables mature fast enough for a second planting. For best results, limit crops like peas to just once a year.
