The next thing to do is to cover the container with a thin, clean and dry towel and cover it for 24 hours.
After 24 hours, sprinkle the Montrachet yeast over the juice and cover it again with a new thin, clean and dry towel.
Check the specific gravity of the wine with the use of the hydrometer.
The hydrometer should read a range of 0.

120.
Put the containers in a dark room and away from the sunlight.
Allow the mixture to ferment for a week.
After a week, get rid of the pulp and siphon the wine with the use of the hose to another container.
Fill the container up with 3 gallons of water then cover the container.
Allow it again to ferment for six weeks or until it becomes clear.
