Spelt Bread with Bananas and Dates



This fragrant coffee bread utilizes three of the health-giving ingredients of the new Nordic diet: spelt flour, skyr (Icelandic yogurt), and walnuts. Sweetened with apple sauce rather than sugar, it has a creamy, thick grain and is even better (as are most Scandinavian baked goods) when served the day after baking, when the flavors have had a chance to meld and richen. Icelandic yogurt is now available in the United States thanks to the swiftly-growing brand of Siggi's Skyr, an awesome non-fat Icelandic-style yogurt carried by Whole Foods and, in the Pacific Northwest, by Haggen's.

Ingredients
  • 3 Tbsp. canola oil
  • 1/2 cup unsweetened apple sauce
  • 2 eggs
  • 3 ripe bananas, mashed into a chunky puree
  • 1 cup chopped dates
  • 1/2 cup chopped walnuts
  • 6 oz. container vanilla-flavored "Siggi's skyr" (or substitute other non-fat vanilla yogurt, draining off the water in the container before using)
  • 2 cups spelt flour (available in many healthfood stores)
  • 1 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt

  • Prep Time: 10 minutes
  • Cook Time: 60 minutes


  • Total Time: 70 minutes
  • Yield: 1 loaf (about 12 thick slices)


Preparation

Preheat oven to 350°. In an electric mixer or large mixing bowl, blend together canola oil and unsweetend apple sauce. Add eggs, one at a time. Stir in the mashed bananas, chopped dates, and chopped walnuts; use a spatula to fold in the Icelandic skyr (or drained non-fat yogurt, if using). Sift together the spelt flour, baking soda, baking powder, and salt; mix into batter until all dry ingredients are blended in.

Pour batter into greased bread pan (Note: I use an ungreased Pampered Chef stoneware bread pan for this, which browns the crumb beautifully). Bake on center rack of oven for 1 hour, or until a toothpick inserted in the middle of the loaf comes out clean.

Remove baked bread from oven, cook pan on rack for 15 minutes, and then remove bread from pan and allow to cook on rack.
