- 1). Make your fortunes. Fortunes can be hand written or typed out on a computer. Simply cut them into thin strips and set aside. If you prefer for the paper to be entirely concealed by the cookie, make them no longer than 3 1/2 inches long.
- 2). Prepare the oven and cookie sheet. Preheat the oven to 400 degrees, and line your cookie sheet with silpat or parchment paper. Spray the silpat or parchment paper with nonstick spray and set aside.
- 3). Mix the batter. Begin by beating the egg whites with the electric mixer until they are foamy. Then add the remaining ingredients except for the water. Beat these ingredients until well combined. Now add the water to thin the batter.
- 4). Place cookies on cookie sheet and bake. Spoon the cookies onto the prepared cookie sheet 1 tbsp. at a time. Using the back of a spoon, spread the batter out to a circle about 4 inches across. Bake for eight minutes.
- 5). Place the fortune in the center of the circle and fold in half. Then fold in half again, bringing the points of the half circle together.
