- 1). Grease the measuring cup into which you will pour the molasses. This will help keep this sticky substance from clinging stubbornly to the measuring cup. This can create a mess and also affect the recipe as you might leave a significant amount of molasses behind in an ungreased cup.
- 2). Measure out an amount of molasses equal to the amount of honey in the recipe.
- 3). Add the molasses to the recipe at the same time and in the same way as you would have added the honey.

- 2). Multiply the amount of sugar you wish to replace with molasses by 1 1/3. If you wish to replace 2 cups of sugar, for example, multiply this by 1 1/3 for a total of 2 2/3 cups.
- 3). Measure out an amount of molasses equal to the amount you calculated. In our example, you would measure out 2 2/3 cups of molasses.
- 4). Reduce the liquid in the recipe by 5 tbsp. per cup of molasses you are using. This compensates for the extra liquid in molasses as compared to sugar. Because of the acidity in molasses, you also need to add 1/2 tsp. of baking soda for each cup of molasses used.
