- 1). Salt and pepper a whole, sectioned or filleted fish.
- 2). Spread a tablespoon of butter along the length of fish.
- 3). Wrap the fish in a double thickness of aluminum foil.
- 4). Place the fish on the hot coals of a diminishing fire.
- 5). Cook for about 20 minutes for a 10- to 12-inch fish.
