They are both delicious and healthy.
This is a dinner that can be made in less than an hour.
Get a pint of ready-made coleslaw from the deli as an accompaniment.
Based on personal preference, serve scalloped potatoes or macaroni and cheese as a side dish.
Either can be purchased as a packaged item and prepared on top of the stove or baked in a separate dish in the oven while the chicken is baking.
Chicken is a common meat in many dishes or by itself because of its good flavor and versatility.

Chicken and Crackers A delicious topping for crackers can be made with a cup of cold, cooked chicken.
Take half a stick of celery and slice it into fine pieces.
Put them in a small mixing bowl.
Finely dice a small amount of onion and add it to the celery.
Cut the chicken into small cubes and put it in the bowl.
Cover and shake the mixture.
Add 1/4 cup of mayonnaise and 2 tablespoons of sweet pickle relish.
Using a fork, stir the ingredients together until well-mixed.

  • 4 skinless, boneless chicken breasts
  • 1egg
  • 1/2 cup milk
  • 1/2 cup dry bread crumbs
  • 4 ounces finely chopped walnuts
  • Salt & pepper to taste
How To Make It Preheat oven to 350 degrees F Rinse the chicken and set it aside.
In a small bowl, mix the egg and milk with a fork.
Put the bread crumbs and chopped walnuts in a medium bowl and toss gently till well-mixed.
Lightly spray a shallow baking dish with non-stick cooking spray.
Dip a chicken breast into the egg and milk mixture.
Immediately put it into the bread crumbs and walnut mix, coating each side.
Place in the baking dish.
Repeat until all have been covered and are in the dish.
Sprinkle the remaining bread crumbs and walnut mixture over the chicken.
Add salt & pepper to taste, or make it available at the table for those who want it.
Serve with baked potato or yams, and a salad.
Bake at 350 F for 30 minutes.
