THE INGREDIENTS:
One tablespoon of sesame oil, more if you desire
One clove of garlic, chopped finely
Two cups of shiitake mushrooms
One small zucchini, sliced thinly
One half cup of bean sprouts
A few pieces of regular basil leaves, fresh and coarsely chopped
Salt and pepper to taste
Sriracha for heat, according to your desire
One cup of brown rice, cooked according to directions in the package, for serving purposes
A dash of sesame seeds for garnishing
Two lime wedges
THE PROCEDURE:
Prepare all the ingredients, like the vegetables and the4 sauces, measured accordingly, as per instructions in the ingredients' list above. Make sure to wash the shiitake mushrooms and pat them dry before the procedure begins. It is important to pile and reserve the ingredients near your stove for easy reach when you start frying. Cook your brown rice separately and reserve for serving purposes. Keep the brown rice warm. As an alternative to brown rice, you can also use the regular white rice, cooked steamed and kept warm till serving.
To begin frying, heat a wok or a large skillet over your American stove at medium heat only. Add sesame oil and the garlic and cook until it starts to brown in color for about one minute. Add the shiitake mushrooms and stir until they are coated well with the oil. Cook for about four minutes stirring occasionally to turn on both sides.
Add the cut zucchini pieces to the wok and cook until the zucchini is heated through for four or more minutes. Stir occasionally to heat both sides of the veggie.
Then add the bean sprouts and most of the basil leaves, but reserve some for fresh garnishing on serving, stir and season it with salt and pepper according to your taste. Mix the ingredients well until the basil leaves are wilted enough.
Then pour in the desired amount of Sriracha to the ingredients. Combine by stirring for a few seconds more. Taste-test it and add more seasoning and Sriracha or squeeze some lemon juice to reach you desired taste.
