Definition of Mokh

Mokh is the Arabic word for brain. The French word cervelle is also used. In Moroccan cuisine, lamb or veal brains might be prepared in a variety of ways. Some examples are:

Brains, like other organ meats, are cooked on the day that they're acquired. Brains in particular are quite delicate and should be handled carefully.


Prep them by removing the blood-tinged membrane. Rinse well and then soak the brains in salted water before cooking.

Other organ and variety meats are also found in Moroccan cuisine. The stomach, heart, lungs, liver and intestines are all used in various dishes, as well as the head, tail and trotters.
