Mokh is the Arabic word for brain. The French word cervelle is also used. In Moroccan cuisine, lamb or veal brains might be prepared in a variety of ways. Some examples are:
Brains, like other organ meats, are cooked on the day that they're acquired. Brains in particular are quite delicate and should be handled carefully.
Prep them by removing the blood-tinged membrane. Rinse well and then soak the brains in salted water before cooking.
